The Signa family ran a humble Delta grocery — but the kitchen took over, and what grew was something deeply rooted: Italian-American tradition meeting Southern soul.

Two-pound sirloins that hang over the plate — cooked precisely to order, never rushed. And alongside them, hand-rolled hot tamales made from steak trimmings, simmered in spiced chili: a pairing so distinctly Delta it couldn't have come from anywhere else.
